Definition A vitamin that dissolves in water and is excreted in the urine. Foods that supply water-soluble vitamins need to be eaten regularly because they cannot be stored in the body. Water-soluble vitamins include vitamin C, biotin, folate, niacin, pantothenic acid, riboflavin (vitamin B2), thiamin, and vitamin B6.
